Slice of cake

Slice of cake

Well, this looks better than it tasted unfortunately.  I'm not sure why it turned out so dry...  It was immensely helped by the mascarpone frosting and the raspberry sauce.

Did you ever remedy your problem with the cake with the marscapone being to dry? Let me know what you found please and are you the author of this cake? Thanks for any info.

I think the problem was with the flour -- it should be potato flour, but I haven't gotten it to turn out. The recipe came from Sherry Yard's The Secrets of Baking.
