Our three pepper soup was the first Sunday Night Soup we've had in several weeks. Travels have prevented much home cooking and it is great to be back. This soup has green, yellow, and orange peppers as well as a poached egg. The broth is based on vegetable stock and has saffron to heighten the color.
I was wondering if you mentioned the name of the cookbook where this recipe came from? If not, it would be great if you could mention cookbooks, so that people may find the recipes.
Thanks! By the way I loved reading "Hope's Edge".

Hi! Thanks for your comment. This recipe is from Twelve Months of Monastery Soups by Brother Victor-Antoine d'Avila-Latourrette -- http://www.amazon.com/exec/obidos/ASIN/0767901800/andwedanced-20. We typically use just a few cookbooks and this one almost always for Sunday Night Soup. If we use a recipe from somewhere else for soup, I always/usually do post the cookbook. Great idea and it's wonderful to know someone's interested in finding the recipe. All my best!
