Raspberry Shortcake

Raspberry Shortcake with whipped cream
This dessert was the finishing touch to our salad dinner on Tuesday night.  Fresh raspberries, drop biscuits left from breakfast on Memorial Day, and decadent, freshly whipped cream combined to make variation on raspberry shortcake.

Great question! The recipe for these drop biscuits, which I used as shortcake, came from Crescent Dragonwagon's Passionate Vegetarian Cookbook (http://www.amazon.com/exec/obidos/ASIN/1563057115/andwedanced-20)

You can use any drop biscuit recipe (often the author will give a suggestion on increasing the sugar by just a bit, if you're planning on using them as shortcakes.

Once you have the warmed biscuits, simply add some fresh raspberries and whipped cream. Mmm...
